Amy's Slow Cooker Chicken with Dumplings

Last week my mother-in-law flew in for a visit. I thought I’d have posts ready that I could quickly publish, but one week flies by fast, I decided it was more important to spend time with family than to sit at my computer — especially since I couldn’t take vacation from work. For now let me share an awesome slow cooker recipe that my mother-in-law made for dinner during her visit.

Meatball Ginger Stew

This weekend my husband I were both too sick to go shopping for fresh ingredients. Luckily between our pantry, freezer and the remaining scraps of vegetables in our fridge I was able to cook up a big batch of spicy ginger and beef soup that would nourish us back to health. What do you wish someone would cook for you while you’re sick?

Slow Cooker Beef Stroganoff & The New Design!

On to the food…

The weather was gray and drizzly, when I was deciding what to cook for dinner last Saturday night which is probably why I chose a comforting dish like Beef Stroganoff. This is a classic, but believe it or not I’ve never made real beef stroganoff from scratch before. I always associate it with the Hamburger Helper beef stroganoff that I made once while I was an undergrad. A creamy, flavourless pasta dish with little bits of meat. If I was going to make this for our guests, (who we wanted to keep as friends) I had to get it right. Luckily, the current issue of Cooks Illustrated had a recipe for ‘Best Beef Stroganoff’ which I adapted to my slow cooker.

Leek & Potato Soup

Great for warming up after adventuring in the crisp winter air. The scent of leeks and roasted garlic in the kitchen made us realize the appetite we had worked up. This soup smells almost as good as it tastes.
