Kissing Winter Goodbye with Lamb Sirloin & Beets

Remember those striped candy beets I used to cook beet risotto during the winter? They are so robust that vendors at the Farmer’s market are still selling them, even though it is almost June. Feeling the need to cook these pretty beets one more time before ushering in the bounty of new produce that is about to come our way, I simply slow cooked the beets with a lamb sirloin roast seasoned with mint, rosemary and garlic — yes, I finally got my lamb!

Quick and Easy Sage & Dijon Pork

With our sage plant taking over the window sill, it was time to harvest its succulent leaves. Without much time for research, I stuck with what I knew — sage tastes really good with pork. I created a rub with minced sage leaves and Dijon mustard to massage into a pork shoulder. With a prep time of only fifteen minutes (including the browning step to get the nice crispy skin), this dish makes a great meal with minimal effort.

Easter Elk

Elk for Easter? Why not ham, or lamb or even turkey? Lamb leg was the plan, but sometimes things don’t go as planned. Despite having ordered two lamb legs for pick-up this Saturday, our order was accidentally missed with the Easter rush, and of course any ‘spare’ legs were already sold out.
