Pomegranate, Clementine and Beef -- Slow Cooked in Squash

This seasonal dish combines acorn squash, clementines and pomegranate to create a scrumptious slow cooker dinner. The citrus flavour of the clementines infused the squash giving it a bright, slightly sweet taste, while the pomegranate juice gave the beef a delicate fruity flavour.

Mole, mole! - Slow Cooker Beef in a Mexican Mole Sauce

The blizzard outside makes me wish there was more of this Mexican mole beef left to have for dinner. The thick, spicy chocolate sauce coats the beef creating a warm and very satisfying meal. The flavour makes it easy to imagine that you’re sitting on a warm, sunny patio. My hubby raved that this is one of the best meals I’ve ever made!

Pomegranate Beef to Welcome the New Year

I don’t know about all of you, but after enjoying holiday dinners and desserts I feel the need for a nutrient-packed, sugar-free meal. This slow cooker pomegranate beef is more than just nutritious, it’s delicious! The tomatoes and tangy pomegranate produce a delicate, almost creamy sauce, that made the beef really smooth — I’ll have to make this again before the pomegranates disappear for another year.

Mongolian Beef with Broccoli

Most of you slow cookers out there have likely cooked a recipe from the ‘Crockpot Lady’s’ website and I am no exception. Her Mongolian Beef was the very first slow cooker meal I cooked in our shiny new slow cooker and we loved it. Meaty and satisfying, spicy but not too spicy. Making it again, a year later, the only changes I made were to add toasted sesame seeds and broccoli.
