Breakfast Burritos with Avocado & Feta

These slow cooker breakfast burritos are easy to prepare and provide a nutritious start to the work day, or a relaxing brunch on the weekend. Cook the eggs, bacon and vegetables in the slow cooker overnight while you sleep. When you’re ready to enjoy your burritos, spread some guacamole on the tortilla, fill it with the scrambled egg mixture and top with crumbled feta.

Breakfast Frittata

We all know that breakfast is the most important meal of the day, but how many of you actually eat breakfast? What do you normally eat for breakfast during the week?

Thanks to my parents, I grew up eating breakfast every single morning before school. Now I have to eat breakfast before work, otherwise my brain doesn’t function — making for a rough day.

Since the slow cooker breakfast burritos were a success, and since we are minimizing the carbs in our diet, (whether they are whole grain or not), the time has come to try another experiment with eggs in the slow cooker.

Rhubarb for Breakfast

So far this spring I’ve taken advantage of the great tasting asparagus by featuring it in a chicken soup, adding it to a slow cooker paella, and lamb navarin. This week I began experimenting with another spring crop, rhubarb. At first I wasn’t even sure how to classify rhubarb, my instincts told me it was a vegetable, but it tends to cooked like a fruit, in pies and jams etc. Technically the part we’re eating is the stem, not the fruit, so I’ve convinced myself it’s a vegetable, what do you think?
