Creamy Raspberry Chicken

Juicy, local raspberries are ready to pick, so I experimented with them to create a savoury slow cooker dish. By combining fresh, red raspberries with chicken, sour cream and rosemary, I ended up with a tangy summer chicken dish that I wish we could eat all year round.

Spicy Pineapple Chicken

After a whole week of being spoiled in Jamaica and getting to eat fresh fruit with every meal, I still haven’t had enough. The first meal I wanted to prepare after returning home to Toronto was spicy pineapple chicken. Chunks of sweet pineapple mixed with tender pieces of spicy chicken make this a perfect summer meal. Plus you can prepare it without turning on your stove!

Home in Time for Canada Day!

As relaxing as our vacation was it’s nice to be home. Toronto summers are hot and sunny too, we’re just missing the ocean and the tropical fruits. I can’t wait to restock our fridge at the Farmer’s Market this weekend — I’m hoping to find cherries from Niagara and a variety of berries (when we left the first local strawberries were already available).

Since Canada (and especially Toronto) is so multicultural, for my Canada Day post I’m sharing a slow cooker version of Mary Moh’s Spicy Cashew Nut Chicken. Happy Canada Day!

Chicken Wings Before Our Flight

Chicken wings are perfect when you feel like relaxing and watching a movie with dinner. For my first slow cooker chicken wings I went for a sweet, honey garlic sauce rather than a hot and spicy variety. We really enjoyed the flavour of these wings and Alice in Wonderland was pretty good too.

Tomato Saffron Chicken to the Rescue

Jerk Chicken

Craving a new spicy dish, I set out to make slow cooker Jerk chicken. Have you ever made your own Jerk Chicken from scratch? Being a first for me, (and not wanting to start with a mystery seasoning pouch), I needed to do a little research.

Of course Jerk is hot, but did you know that the main ingredient other than the Scotch bonnet peppers is allspice? A surprise to me, since I associate allspice with sweet dishes, not savoury.

Slow Cooked Chicken with Rhubarb Sauce

Since we loved the gluten-free rhubarb slow cooker breakfast, I decided to experiment with rhubarb in a savoury dish. Tomatoes, cumin, lemon, ginger and saffron combined with the rhubarb to create a refreshing, light sauce. A great combination of flavours to add to slow cooked chicken.
